Allergens are the substances responsible for allergic reactions wich are a response of the immune system to its presence in the body
According to the Alergológica 2015 report of the Spanish Society of Allergology and Clinical Immunology (SEAIC), one out of every 10 people who come to your consultations come because of some type of food allergy. Its symptoms can lead to very violent and dangerous reactions such as anaphylaxis (an immune reaction that affects several organ systems and can be fatal). In addition,people who suffer severe reactions are even sensitive to a very small amount of allergens, so they can not always be sure what to eat, since a microscopic trace can take them to the hospital.
The new Food Information Law (Allergens) has an annex that lists all substances that pose a risk to people suffering from food allergies or intolerances.
Zero Allergen it’s a new healthy concept exempt from the 14 allergens of mandatory declaration referred to in (UE) nº 1169/2011
